Garlic and Thyme Roasted Asparagus



Can you believe that it's already August? The summer has just flown by! I don't know about you but this is the start of my favorite time of year as the State Fair gets going which segues into fall and all of it's changing of  leaves, pumpkin and apple treats, and cool fall nights full of bonfires.

But before we get too far ahead of ourselves I want to share an easy and simple side dish make with veggies straight out of the farmers market. I don't think asparagus gets enough credit. I've make asparagus a few times before but now I have come up with a really great mix of seasonings.



For this dish you'll need:
  • One bunch of asparagus
  • Olive Oil
  • Ground Thyme
  • Pepper
  • Minced Garlic
  • Sea Salt
 

First you'll want to wash the asparagus and chop off about an inch and a half off the end.

On an aluminum lined baking sheet, lightly coat the vegetables with olive oil and then season to taste. I tend to be light handed on the salt and the thyme and a little more heavy with the garlic and pepper. 


Bake at 375 degrees F for 10-12 mintues.

And it's really just that easy! The asparagus comes out bright green and cooked through but still crunchy. I've made asparagus a few times but this batch really takes the cake.
