
Today I got the joy of going to P.F. Chang's for lunch. I absolutely love Asian food. And with a house full of Asian sisters I know that they enjoy it as well. It's one of my families favorite meals.
I'm not exactly sure where I found the original recipe but I have added it to it. I feel like meals are more well rounded when they have veggies! If course you can leave them out or add more in if you wish. And white or brown rice goes well with this as well. So please make it your own!

Sweet and Sour Chicken
Ingredients:
Meat
- 2 chicken breast cut into bit size chunks
- 2 tablespoons soy sauce
- 1 egg
- 1/4 teaspoon pepper
- 3 tablespoons cornstarch
- 3 tablespoons flour
- ½ teaspoon sesame oil (optional)
- Oil for frying
Sweet and Sour Sauce
- 1 red bell pepper cut into strips (optional)
- 1 cup pineapple chunks (or rings cut into chucks)
- 1 cup pineapple juice (if there isn’t enough juice in the can you can put water in it)
- ¼ cup brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
In a frying pan, begin heating up the oil over medium heat
(Probably only about a half inch).
In a bowl combined all the ingredients for the meat. It should form a thick paste. When the oil has heated put all of the meat
into the pan and fry until the meat is a nice golden brown and cooked through.
Set aside on a paper towel.
In a sauce pan, over medium heat cook the bell pepper for
about 2 minutes. Add the pineapple and
the pineapple juice and bring to a boil.
When the mixture comes to a boil add the soy sauce and brown sugar.
Reduce the temperature and simmer for five minutes. Meanwhile combine the cornstarch and water in
a separate bowl.
After simmering for 5 minutes add the cornstarch mixture.
The sauce will be thick enough to cover the spoon.
Mix the meat and sauce together and serve with white rice.
Makes 3 large servings
