Roasted Vegetables with Olive Oil and Liquid Smoke

 A few weeks ago, I was going through the fridge and I noticed that we had a lot of veggies hanging out in the crisper with no purpose, no plan! So I thought to myself that they really needed to be used up instead of just sitting in the fridge until they molded because my forgotten plan of green beans lay in the back of my mind.

I also tried to come up with a more creative name like "clean out the fridge" veggies or something to that effect but it was no use!

After scouring the fridge for what had been left behind and forgotten, I ended up with white and red onions, red potatoes and carrots.

Now I am NOT saying to use bad veggies! If your spinach ( not to say spinach is appropriate for this dish) has turned into green slime like you would see in a lake, you SHOULD NOT use it! Use your heads people!

And of course, fresh right from the store is just fine as well!


Ingredients: Oil Olive, Garlic Salt, Liquid Smoke-the Hickory version, pepper (not pictured) and an assortment of veggies you would like to roast.



Cut the veggies into similar size pieces and lay them out on a jelly roll pan in an even layer.

I am tons of veggies so mine were spread thickly across two pans! Girls have got to eat! All 7 of us! My poor father...


Next drizzle the veggies with olive oil, just enough to coat.

Oh sorry...

Now this is some garlic salt that I picked up the last time I was in Austria and it is GOOD stuff!

And sadly it's almost out, which means I need to go back to the area. Again.


Give a healthy shake over the veggies. Add some pepper in their as well. Or Creole seasoning!


Liquid smoke...my new find! This veggie recipe is actually based off of one from my cousin and she is the one who reminded me about this. I vaguely remember seeing it used in a Pioneer Women recipe!


Now put a few drops of the liquid smoke on the veggies. Don't go too crazy though! It's pretty strong stuff.


Give'em a good stir! Make sure all of the veggies get coated with the oil, LS, and spices


Deeeeelish!


Pop them in a 350 F oven for about 35-40 mins or until they are to your desired doneness.

Roasted Vegetables with Olive Oil and Liquid Smoke

  • Various Vegetables for Roasting (Carrots, Potatoes, Peppers, Onions, etc.)
  • Olive Oil
  • Liquid Smoke
  • Garlic Salt
  • Pepper 
  1.  Preheat oven to 350 F
  2. Clean vegetables and cut up into similar sizes
  3. Spread out on jelly roll pan
  4. Drizzle with olive oil
  5. Sprinkle spices to taste
  6.  Add a few drops of liquid smoke
  7. Bake for approximately 35-40 minutes
