Cake Batter Cookies

Happy Monday! Hope you all enjoyed this fabulous fall weekend! I know we did will a great cookout and a few rounds of capture the flag. The weather has been absolutely perfect!

For any of you who have been on Pinterest lately you know that anything cake batter related is really popular right now. And it just so happens that I love cake batter anything! So I stumbled across this recipes for cake batter cookies. They're really easy and quick to make!


All you will need are eggs, oil, vanilla, baking powder, one box (18.25oz) of cake mix, and sprinkles.

Apparently my area we only have 15.25 oz boxes of cake mix. So a touch of flour will be needed as well.
 

You'll want to start off by whisking a 1/2 cup of oil and two eggs together.


This add in a teaspoon of baking powder and a 1/2 teaspoon of vanilla.


Now I mixed in the cake mix just to see if I needed the flour or not. I went ahead and put some in the mix but honestly the next time around I will leave it out. I think that it left a bit of a raw flour taste in my mouth and I didn't care for it.

I'd honestly open up another box of cake mix before I would put flour straight into it. 


For the sprinkles you can add as many or as less as you want. I ended up using about a 1/3 cup but I have seen recipes that use up to a whole cup. To each his own!


Drop tablespoonfuls onto a grease or lined baking sheet.

And please try and not eat the dough! (As always...eat raw eggs at your own risk!)


Now pop into a 350 degree oven for ten minutes. When they're done you'll want to let them sit for about 5 minutes or they will fall apart.

This next step is very, very important.


Taste test! How in the world will you know if they are good if you don't?!

This recipe ended up yielding 3 dozen cookies give or take because of a few quality control samples.

We had so much fun over the weekend; it was almost like being back in youth group again! The fall is by far my favorite season.

Also for those of you who are following the wedding planning we past the 11 month mark over the weekend as well. Where in the world is the time going!?

Cake Batter Cookies
    yields 3 dozen
1 box white cake mix, 18.25 oz (Or 15.25 oz with a bit of flour)
1 tsp baking powder
2 eggs
1/2 cup vegetable oil
1/2 tsp vanilla extract
1/3 cup color sprinkles

Preheat oven to 350°.

In a large bowl, mix together all ingredients.

Stir in the sprinkles. 

Drop by tablespoonfuls onto a greased or lined baking sheet. 

Bake for 10 minutes and then cool for 5 before removing from sheet.
