17 Day Diet- Cycle 1 Day 6

I absolutely can not wait for my scale to move. I have seen it jump down so many times and that is what I want to see it do again.

I remember the when I first joined Sparkpeople and started using the website. I decided that I would weigh in on Sunday mornings so that I still had to be semi-good on the weekends. It worked out for me pretty well.

I just remember that motivating feelings after I got off of the scale the first week after seeing that I had lost 2 pounds. It was crazy to me! Because I didn't feel like I lost weight. I didn't think I did enough to loose weight. But I did and it was amazing!

So here I sit at 29 pounds lost. Oh so close to 30! I know it is only one pound and if I stay on track the rest of the days I will probably loose more than that. But I tell you what, 30 lbs is another bench mark! And I'll talk that!



Breakfast: Lemon water, raspberry yogurt, and strawberries




Lunch: Chicken, Lettuce, and Mustard Roll ups


Yummy!



Dinner: Salsa chicken, low fat sour cream, fresh green beans, yogurt, and an apple,

I could have sworn that we had BBQ sauce in the house! But I think making Salsa chicken is a nice alternative! I got this recipe from one of my friends through out high school. It is so simple which makes it so user friendly!

Salsa Chicken

1 pkg. chicken legs/breasts (Mine was about 5 lbs)
1 pkg taco seasoning
1 jar mild salsa
Low fat cheese optional

Preheat your oven to 375 degrees F

Place the thawed chicken in a 13 X 9 cooking pan

Sprinkle the entire package of seasoning on the chicken, making sure the chicken is throughly seasoned.

Dump the salsa over the chicken and spread it out

Bake for 40 mins or until your thermometer reads 165 degrees F

If you want to put cheese on it, sprinkle it on top and bake until it's melted and bubbles. It works better with chicken breast but you can do whatever!
