Beef Stir-Fry



Chinese food is always a staple around our house. I absolutely love Chinese food and so does my family. Well except my mom, she's just weird like that.

I had been searching around the our chicken and we were completely out of chicken. Which is crazy! But what I did find was about 20 pounds of beef. So then I got the idea for a beef stir-fry! Super good and I could add as many veggies as I could round up.

So first you want start out with some boneless round steak.



I had to defrost mine.

In the meantime I mixed together some water, cornstarch, and garlic powder.



Cut the fat off the meat and then then cut it into strips.



Coat the strips in the mixture and toss into your heated and oiled wok or frying pan.



While those are browning cut up any veggies you want. I had broccoli and bell peppers. Yummy!

The sauce is made out of soy sauce, brown sugar, ginger, and cornstarch. Mix it all up and make sure the corn starch is dissolved.

After the meat is cooked through take it out of the wok and set aside. Put a little more oil in the bottom of the wok and dump all of the veggies in. It should take about 5 mins or so.



While the veggies were cooking I found some scallions in the fridge. I though they would make a nice addition.





When the veggies are done return the meat back into the pan and then pour the sauce over and stir fry for about 2 more minutes.



Yum! I absolutely love Chinese food! The is really great served over rice.

You can make this dish healthier by using the Splenda version of brown sugar as well as low sodium soy sauce. I would just have to warn you that using it will make the sauce water tasting. So maybe a half-half mixture would work!



I had to make twice the recipe because I was feeding my fiance, my 5 hungry sisters, and myself!

Beef Stir Fry with Veggies

      Ingredients
  • 3 tablespoons cornstarch, divided
  • 1/2 cup water, plus
  • 2 tablespoons water, divided
  • 1/2 teaspoon garlic powder
  • 1 lb boneless round steak
  • 2 tablespoons vegetable oil, divided
  • 4 cups veggies-broccoli, peppers, etc
  • 1 small onion, cut into wedges opt
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
Directions:
In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.

Add beef and toss.

In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.

Stir-fry vegetables in remaining oil for 4-5 minutes.

Return beef to pan.

Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan.

Cook and stir for 2 minutes.

Serve over rice.

  1. Definitely gonna try this! A good substitute for sugar is Xyletol. Tastes like sugar but it is a 100% natural product, a sweetener that occurs naturally. It can be found in berries, fruit, vegetables it is already present in our bodies during normal metabolism.

    Another good substitute for cornstarch is rice flour. Can be used in equal amounts and works just as good and is much healthier. :)

  2. Thanks so much! I will have to try the rice flour out. Where can you buy Xyletol? I need something for the cake to balance out the bitterness in the cocoa that isn't white sugar.
