Flour-less, Dairy-free Peanut Butter Cookies


The past few weeks I have been almost consumed with finding dessert recipes that don't contain any flour. I would have to say it's because from coming off of the first cycle of the 17 day diet I had to be creative like that.

Don't get me wrong this recipe is NOT 17 DD approved! It's probably not approved in any diet because it makes peanut butter cookies easier and faster to make!

But really, who doesn't love cookies right out of the oven?

I found a few different recipes through pinterest and surfing the internet and this is what I was able to came up with.

Enough talk, let's bake!



The ingredient are super simple. Peanut butter, white sugar, brown sugar, an egg, vanilla, baking soda, and if you want and have them around the house, chocolate chips.

Obviously if you put chocolate chips in then they won't be dairy free!



Now after beating the egg, dump in the peanut butter, brown and white sugars, and give a little bit of a mix.



Then add the baking soda and a splash of vanilla.

The recipe calls for a 1/2 teaspoon but while I was trying to be artsy I'm pretty sure I at least doubled that!

If you have it you can add in about a 1/2 cup of chocolate chips.



Yum! Do try and resist eating this with a spoon!

And remember, you eat raw egg at your own risk!




Now after spraying a aluminum lined baking sheet form scoop out rounded balls of dough and drop on the cookie sheet.

Using a scoop for this type of dough is much better than a regular spoon. The dough is much wetter without the flour and therefore sticks to everything.

Make the lattice pattern. Again, the dough is sticky so wet the fork after every cookie.



Bake at 350 degrees for 10-13 mins.

Or you can be like me and leave and download software on your laptop, then go outside and get distracted and take a few pictures and then remember that you are in the middle of a cooking experiment!

Never the less they weren't burnt! Let them sit for a minute or two so they can harden up a little but. If you take them directly off of the cookie sheet they will fall apart.

 

Yummy! Perfect with a glass of milk!

I'm not sure how well they keep. Both times I have made them they have been eaten so fast that packing them away doesn't matter.

Flour-less, Dairy-free Peanut Butter Cookies- Yields: 2 dozen

1 cup peanut butter- smooth or chunky
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla
1/2 tsp baking soda
1 cup chocolate chips-optional

Preheat the oven to 350 degrees F

Mix all ingredients together.

Drop dough on a lined baking sheet since there isn't any flour the dough is kinda sticky.

Take a fork and press the cookies. Dip the fork in water every few cookies.

Bake for 10-13 mins.

Let them sit for about a minute so they can set up.

Eat! Make sure you get one because they will go very, very fast!

    1. It's a half cup of sugar! I would hardly call it "all that" white sugar!

  2. going flourless and dairy free isn't always about being extremely healthy (or for weight loss) , for many its because they can't have dairy or flour/wheat/gluten. If you are so worried about the sugar, use xyletol or some other natural substitute. Or do sugar free cookies. :) keep up the great posts cara! Always looking for new recipes that have no gluten.
