It's cauliflower pizza day! And you all know what that means! I have successfully made it through a Friday without splurging on my diet.
So first off let's go over breakfast and lunch. After a really arduous 3.5 mile walk I enjoyed about a liter of water and some lemon yogurt.
It was 105F today people!
Lunch was another round of Turkey Taco salad. It was a lot of filling food but didn't compare to the one I made earlier.
Ok, so now on to the cauliflower pizza. This is one of my great finds off of pinterest. I would say it's a moderate recipe in terms of work. If you have a food processor it's a breeze.
Here is what you need. Cauliflower, eggs, parm cheese, mozzarella cheese, Italian seasoning, onion powder, orgeano, pizza sauce, and any toppings.
But whatever you do, do not use non-fat cheese.

It doesn't melt and therefore would completely defeat the purpose of binding the crust together.
First of you need to rice the cauliflower into a microwaveable bowl.
Then cook cauliflower for 8 mins. in the microwave. The natural moisture of the cauliflower steams itself.
After its cooked mix in the cheeses, reserving some for the top, eggs, and spices.
Spread out onto a pizza pan. I made about 8 times the recipe since I was cooking for 10 people.
Then cook in a 450 degree oven for 15-20 mins. Until it starts to brown.
Look at those lovely brown spots!
Now you can top your pizza how ever you like. I ended up using turkey pepperoni and spinach.
And wah-lah!
So yummy! Just like bread!

Here is the recipe. From my guesstimate this makes a personal sized pizza.
Cauliflower Crust Pizza
Ingredients:
1 cup riced Cauliflower
1/2 cup parmesian cheese
1/2 cup mozzarella cheese (plus some for topping)
1 egg beaten
1 tsp Italian seasoning
1/2 tsp garlic powder
olive oil
Toppings- Sauce, cheese, veggies, meat
Directions:
Preheat oven to 450 degrees F
Rice Cauliflower
Cook in microwave for 8 mins. Natural moisture in cauliflower will steam it.
Mix cauliflower, cheeses, egg, and spices and then spread on a greased pizza pan. You can use the olive oil here or just cooking spray.
Bake for 15-20 mins or until the top starts to brown
Remove from oven and top pizza with desired toppings.
Return to oven and broil for 3-4 mins until the cheese has melt.
